Its almost back to school time, so I thought I would share a lovely and simple early morning breakfast recipe as my first post!
Overnight oats are one of my favorites! Oatmeal is wonderful in the cooler months, but its still warm out, so these beauties are perfect! Oats provide magnesium, fiber and protein, and are absolutely delicious topped with this quick raspberry jam!
Recipe Serves one:
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 1/4 tsp vanilla extract
- 1/2 a banana
- 2 Tbs peanut butter (or almond)
- 1 Tbs chia seeds (optional)
- handful of raspberries
- 1 tsp maple syrup
In the evening, combine oats, almond milk, vanilla extract, banana and peanut butter and mix until combined. Pour into a jar, cover and put in the fridge.
In the morning, mix raspberries, chia seeds and maple syrup in a small bowl, let sit for a few minutes. Pour on top of the overnight oats and enjoy!
